If my palate was feeling homesick after my departure from Rome, Pacci Italian Kitchen and Bar in downtown Savannah was glad to provide some comfort. Taleggio cheese, Arancini, Fritto Misto, pasta all’Amatriciana and a tempting Peroni were more than enough to transport me straight back to a night in Rome. The classics were just the beginning though, with a slew of creative and innovative Italian offerings to distract me from them.
Here, baby arugula in a blood orange vinaigrette hides roasted and pickled beets in the beet salad. Marcona almonds sprinkled throughout and a decadent slab of Burrata on top beg you to take a taste. When you do cut in, the Burrata’s soft interior, bright orange juices from the interspersed orange segments, and the fuschia trail left behind by the beets combine to create a colorful masterpiece on your plate.
